Two Monkeys Bread

Last night we went to a friend's house. He handed us a pan and said "Try this. It's my version of monkey bread." It was really good! There were only a few pieces and he suggested we make some more and add a cream cheese topping to it. So we went in the kitchen and he showed me how to make his very simple and quick monkey bread. I showed him how to make an easy cream cheese topping. My husband said it should be called Two Monkeys Bread.


We didn't measure anything, but here are the ingredients:

Bread:
Butter
2 cans of Pillsbury Grand's Biscuits
1 can of Sweetened Condensed Milk
Brown Sugar
Cinnamon

Topping:
8 oz. Cream Cheese
1/2 cup Sugar
1 Egg

Turn the oven on 350 degrees. Grease the bottom and sides of a baking pan with butter. Cut up another 2 or 3 tablespoons of butter into small pieces and put in the pan.  Tear the biscuits into small pieces and put in the pan. Pour sweetened condensed milk over the biscuits and butter. Sprinkle brown sugar and cinnamon over the biscuits. Stir to combine everything. Put in the oven for about 10 minutes. If you don't want the cream cheese topping, bake it for about 5 more minutes. It's really good without it too!

While the bread is baking, put cream cheese, sugar and the egg in a small bowl and mix with an electric mixer until smooth. After the bread has baked 10 minutes, take it out of the oven and use a spatula to spread the cream cheese on top of the bread. Put it back in the oven and bake it for another 5 minutes.

I didn't get a picture of the monkey bread with the topping because everyone immediately started digging in!

  2. Hi Chris, by any chance you have left over the next day? Did the bread become hard? I was thinking to make this for snack day at the office, but I'm not sure if the bread will get hard the next day...

  3. Anny, I know the pan he served me first he had made the day before and it was still soft. Also, he didn't have cream cheese topping on the first pan, so I'm pretty sure that would help seal some of the moisture in. If you make it, let me know how it turns out!

    By the way, I'm using your recipe today to make self-filled cupcakes!
